homemade granola

thought i’d share my favorite way to make granola at home. my recipe is adapted from this one.

it’s healthy & easy-peasy. it also makes a great gift for granola-loving family & friends.

preheat oven to 350. line a rimmed baking sheet with parchment paper.

3 cups of whole raw rolled oats
1/4 cup raw sunflower seeds
3/4 cup raw whole cashews
1/2 cup raw sliced almonds
1/2 cup shaved coconut
1/3 cup veggie oil
1/3 cup honey
1/2 cup brown sugar (do not firmly pack)
2 teaspoons vanilla extract
(handfuls of dried berries & raisins)

mix all ingredients together, & spread the mix on the baking sheet. bake @ 350 for about 20 minutes, turning the pan & tossing the granola halfway through. (granola should be a brownish-reddish color when done.)

after baking, let cool completely on the baking sheet. once cool, break up the granola into chunks. toss in a large handful each of dried cherries or cranberries & dried raisins (or any other dried fruit on hand – dried apricots, cut into pieces, are especially good too). store in an airtight container.

we love to keep our granola out in a glass jar. :)

i like to enjoy my granola with plain yogurt and fresh berries anytime of day. robby especially likes his with soy milk and fruit. it’s also delicious over tart frozen yogurt with blackberries as a summer treat.
